Kachi Chicken Briyani



Kachi briynai is purely a Special mughal dish. Kachi means raw.It is called kachi briyani because marinated raw meat cooked with rice. The dish is cooked layered with the meat and the yogurt based marinade at the bottom of the cooking vessel and the layer of rice.The vessel is sealed with wheat or maida dough and allow cooking in its steam and not open till ready to serve.Boiled egg and onion raita accompanies the dish.

Ingredients:

chicken - 900 gm

basmati rice - 500 gm

fried onion - 1 cup

ginger garlic paste - 2 tsp full

turmeric powder - half tsp

chilli powder- 1 tsp

garam masala - 1- 2 tsp

whole pepper - half tsp

shahjeera - half tsp

lime juice - 2 tbsp

chopped coriander,mint leaves - each half cup

kasoori methi - 2 tbsp

yogurt - 250 ml

saffron - 2 pinch dissolves in half cup milk

maida - half kg ( for dough preparation)

ghee - 2 tbsp

salt - to taste.



Fry the onion till golden brown and keep aside.




Knead the maida into smooth dough.


Clean, cut and wash the chicken pieces thoroughly and drain the water.


Mix the chicken pieces with yogurt, ginger garlic paste, chilli powder,turmeric powder, garam masala, kasoori methi, half chopped coriander and mint leaves and salt and marinate for 1 - 2 hours.


Cook the rice 3/4 done with pepper and shahjeera with enough water and salt, drain and keep aside.

Heat the heavy bottomed vessel add half of the marinated chicken .


Cover with half rice, sprinkle half of chopped corinader and mint leaves,fried onions and lime juice and half of saffron milk and one tbsp melted ghee.


And again add half of the marinated chicken.


Then cover with rice, add half of chopped corinader,mint leaves,fried onions,lime juice,saffron milk and one tbsp melted ghee.


Then cover the vessel edges with maida dough and close it with lid.Place it over high heat for 10 minutes.Then low the flame for another 30 minutes.


The dough will start to crack and peel off. Switch off the stove and allow to dum for 15 minutes.

Now open, mix gently and serve hot with boiled egg and raita.

Bombay Bun Toast


Ingredients:
long bun - 1 or few bread slices
egg - 1
milk - 3 tbsp
sugar - 2-3 tbsp
ghee & oil mix - 1 tbsp
Steps to follow:
Cut the long bun into 6-8 small pieces.

In a bowl add milk,sugar and egg, whisk well untill sugar dissolves.

Dip and soak the bun slices in the egg mix for a minute.

In a pan heat ghee oil mix and toast the bun to golden brown colour.

Now yummy bun toast is ready to serve.Babies would love to have this.

Banana Curd Rice

Ingredients:
small banana – 1
fresh yogurt – 1 tbsp
cooked mashed rice – 2tbsp
sugar – 1 tsp ( or to taste)

Directions:

Mash banana then add,curd and sugar. Add rice and mix well.
Tasty banana curd rice is ready to serve.
Feed the baby immediately.

Bananas are another great first food for your baby. Research indicates that bananas and their mucosal properties actually help coat the tummy and help aid in digestion. Bananas are sweet, which may help baby more readily accept the first food experience.
A few wonderful choices for first foods for babies, as many pediatric resources are now acknowledging, are tasty and creamy bananas . These healthy and nutritious food make really great food for baby because they are easy to digest and full of vitamins, minerals, fats and other nutrients a growing baby needs..

Oatmeal and Fruits





For Baby and Toddlers:

Ingredients:

Instant oats - quarter cup

water - half cup

cooked mixed fruits -Quarter cup

or fruit cocktail in heavy syrup

sugar - 1/2 tsp


Steps to Follow:Mix oats and water, bring to boil, reduce heat, stir for two minutes.

Peel and dice the fruits ,add little water and cook in low flame. Remove and allow to cool and then mash with the (potato)masher.

Remove the oats from stove and mix it with mashed fruits and again mash until smooth. Add sugar to taste, mix well .

Oatmeal and fruits is ready to serve.

Spoon into a small serving bowl and feed the baby immediately.

Date Pudding





Ingredients:

Dates - 1 cup (finely chopped)

sugar - half cup

butter - 2 tbsp or more

milk - 1 cup

sodium -bi -carbonate - 1/2  tsp

flour no 1 (maida)- 1 cup

vanilla essence - 1/2 tsp

to garnish - few cherries.

Serves - 6-8 persons.

Steps to follow:

In a pan combine chopped dates,sugar,butter,milk and place on a low flame.

Stir till the sugar is dissolved and the mixture just begins to boil.


Remove from fire and allow it to cool completely.

Add the vanilla essence ,flour sifted with baking powder.

Mix Well.

Pour in a greased aluminium or stainless silver vessel and cover witha piece of aluminium foil, so that the steam and water cannot enter into the mixure.


In a pressure cooker pour three cups of water and place the cooking plate in it.When the water boils, place the covered vessel in it.Cover pressure cooker with the lid, put weight, steam for half an hour in a medium flame.

Cool the pudding for 15 minutes.

And turn on the serving plate then cut into pieces. Super Sponge Date pudding is ready to serve.





Ingredients for Custard: (optional)

Milk - 1/2 litre

vanilla Custard powder -2- 3tbsp

Sugar - 4 tbsp or to taste
Directions:
Mix custard powder with half cup milk.Heat the remaining milk ,when it begins to boil add the custard powder mixture to the milk, stirring till the custard boils and thickens.Add sugar mix well and remove from fire. Cool and serve.


Garnish with cherries and serve with custard.

Falooda / Subja Banana Jelly Shake

When basil/subja seeds soaked in water the seeds become gelatinous, and are used in Asian drinks and desserts such as falooda or Sherbet.

Sabja seeds or falooda seeds are taken in sherbets as they produce a cooling sensation within the stomach. · Sabja reduces the nauseous feeling and controls vomiting. · Falooda seeds are good expectorants and when chewed they treat sore throat, cough, asthma and headache· Scientific studies have established that compounds in falooda seed have potent antioxidant, anti-cancer, anti-viral, and anti-microbial properties.


Ingredients:
falooda /basil/subja seed - 2 tsp
vanilla ice-cream - 2 scoops
jelly - few pieces
milk - half cup
banana - 1
garnish with a tsp of almond and pistachio flakes.



Soak the falooda/saubja/ basil seeds in half cup water for 2hours.Peel and cut the banana into small pieces.


Pour half cup of thick milk in a glass tumbler,then add jelly pieces,banana pieces,one table spoon of soaked subja seed, then add 2 scoops of vanilla ice cream and garnish with chopped almond and pistachio flakes.

Serve chilled. Enjoy the Yummy Summer Special.

Baked / Steamed Apple Pudding




Ingredients:
apples - 1/2 kg (3 apples)
honey - 4 tbsp
lime juice- 2 tbsp
cinnamon powder - 1/2 tsp
bread slices - 8 (if using large sandwich bread, use only 5 slices)
butter- 5 tbsp
sugar - 4 tbsp
raisins- 3 tbsp
chopped walnuts - 3 tbsp
milk - 1/2 cup

to garnish - few cherries and pistachios.

Steps to Follow:
Break bread slices into tiny pieces. Melt Butter, add bread an sugar.
Cook Stirring till the crumbs turn rich brown in colour.Add milk.Mix in the raisins and walnuts.
Peel , core and slice the apples. Take a baking dish,First Arrange 1/2 the apple slices in it.Trickle with 1/2 the amount of honey.Sprinkle 1/2 the lime juice and 1/2 the cinnamon powder on top.Then cover it witha remaining apples ,top it with remaining honey ,lime juice,and cinnamon powder.

Cover the baking dish with its lid. Preheat the electric oven at 250 degree and bake it for 45 minutes or steam this in pressure cooker for half an hour. While steaming the vessel should cover with a piece of aluminium foil.
When it's done baking or steaming , let it cool down.

Just before serving invert the pudding on a serving plate or bowl.

Garnish with cherries and pistachios. Serve it with custard.

Egg Boondhi / Muttai Boondhi



Eggs are a super food which contain large amounts of protein, amino acids, vitamins and minerals and they're also energy dense, at about 80 calories per egg.

On the other hand, in addition to iron, egg yolks can be a good source of DHA, an important component of breast milk which is now being added to many infant formulas and baby food to try and promote a baby's growth and brain development.
If your child has already shown allergic reactions (an allergic rash, for example), talk to your pediatrician about when to introduce eggs.
Egg Boondhi
Ingredients:
eggs -2
sugar - 4 tbsp
cows milk -2-3 tbsp
ghee - 1 tbsp
Steps to follow:

In a bowl add eggs, sugar,milk and beat thoroughly till sugar dissolves.

Heat ghee in a pan add the beaten egg mixture and set the flame to medium slow.


Stir continuosly till the egg rolls up to a boondhi like shape.


Switch off the flame and transfer to a serving plate.




Garnish with roasted cashews and raisins. Babies would love to have this with bread or just like that.
