Baked Veg Pasta with Bechamel Sauce & Cheese


Ingredients:
penne pasta - 200 gm
bechamel ready  rmix - 75 gm + 500 ml milk.
shredded mozzarella cheese.- 100 gm or more to taste
chopped capsicum - 1
chopped onion - 1
chopped mushroom- 100 gm
chilli garlic sauce - 2 tsp
oil - 1 tbsp
salt and pepper to taste

Serves - 3 - 4

Steps to follow:
In a vessel add enough water, allow it to boil, then add pasta, salt and 1 tsp oil,  cook for 8 -10 minutes,Drain and keep aside.
 How to prepare bechamel sauce:
In a sauce pan add milk and bechamel mix, mix  well with out lumps,Switch on the stove slowly mix until the sauce thickens to the required consistency.Add pepper powder to taste and keep aside.

 Then heat oil in a pan add chopped onion, chopped capsicum & chopped mushroom,Stir well for 2 minutes or until dry,sprinkle little salt and pepper to taste. add chilli garlic sauce or hot chilli sauce to taste.Switch off. Keep aside.
 Now everything is ready. Then arrange those items in the baking bowl.

 In a baking bowl arrange first half of the cooked pasta then  half of the bechamel sauce and over that  stir fried veggies and half of the shredded mozarella cheese.
 Again next layer add pasta & bechamel sauce.

 Then spread the mozarella cheese.
 Preheat the oven to 200 degree or medium temperature.Put the baking bowl in the oven and cook for
20 minutes.Turn off .Let it stand for 5-10 minutes.

.
 Carefully taken out from the oven.
 Divide into 3 -4 equal portions.


 See how nicely baked..
  Serve warm with sprinkled pepper powder.
This is one of my  children most favourite recipe. I used to make the baked pasta regularly with little changes.This is made according to my son's taste.It came out very well.

Pan fried Beef Steaks



Ingredients;
thin beef steaks - 300 gm (5 pieces)
garlic powder - 1 tsp
onion powder - 1 tsp
pepper powder - 1 tsp
soy sauce - 2 tsp
meat tenderiser - quarter tsp
lime juice - 1 tbsp
sliced capsicum and onion - each one medium size
oil - 2 tbsp
salt - little to taste.
Steps to follow:
 Rinse thoroughly and pat dry the beef steaks.In a tray take beef steaks, mix garlic,onion pepper powders,soysauce,lime juice,meat tenderiser & oil 1 tbsp and salt to taste.
 Mix and keep aside.
 Marinate for at least 4 hrs in fridge.
 Heat 1 tbsp oil in a pan transfer the marinated beef to the pan.stir fry for 10 minutes in a medium flame.

 Then add onion and capsicum slices and again stir for 5 - 10 minutes.Switch off.

 Now the yummy beef steak is ready to serve.
 My son wants to taste this beef steaks, so I made it. those who like beef can try this recipe.

Ginger Mutton / Beef Fry



Ingredients:
boneless mutton / beef pieces - 400 gm
chilli powder - 1 tsp
chopped ginger - 2 -3 tbsp
chopped curry leaves - 2-3 tbsp
mustard seeds - 1 tsp
oil - 2 tbsp
salt - to taste.

 Steps to follow:

Rinse thoroughly and drain the mutton beef/ pieces and keep aside.

In a pressure cooker add mutton,chilli powder,one cup water and salt to taste.

Cook for 5-6 whistles in a medium flame or until mutton/beef  cooked soft..After pressure released open and again switch on the flame.
Dry the mutton pieces without water.
Meanwhile chop the ginger and curry leaves.

In a pan heat oil, add mustard seeds,when it crackles add chopped ginger and curry leaves.
Then add the cooked mutton pieces,mix and stir well for  few minutes.

Now the delicious flavorful ginger mutton fry is ready to serve.



Serve garnish with  julienned ginger and curry leaves.

I was  grown up with my brother's family, my sister in law is my inspiration and she taught me cooking. She is almost like a mother to me.Till now she is fulfilling my mother's place.

My Daughter My Critic

Hello my friends !

Minnie from Dream a dream, Live a life and thelady8home , Hope you all know her. It's a great pleasure to share the news that her new blog   thelady8home completes one year of blogging and also combining with Mother's Day event, she wants to celebrate and announced a Giveaway contest. When I saw the event details, I remember my ever bubbling daughter. I just like to share few things between us.

From the moment they placed her in my arms, I became more joyful than ever.
A mother's treasure is her daughter and My treasure is my daughter.
To my knowledge, among all the relations, mother- daughter relationship has a divine value. When we think about such a relationship, first thing that pops up in everyone's mind is that, they compliment each other, they work hard hand in hand and they connect. But it's not always the same in my case. When I start off in a friendly manner to advice her, it mostly ends up being a tom & jerry fight. Still it's hard for us to stay away from each other.
Many a times, I wonder, "Who's the mother here?"

You always need a person to judge your act and appearance, Let it be, my looks, my cooking, my way of communication, my public behaviour, a comment will slip out of my daughter's mouth immediately, whether it's a positive or negative remarks.

I have always enjoyed cooking for my daughter.  My daughter always enjoys to share her food with friends at school and come back home with wonderful comments.
 I searched in Minnie's blog. It is full of beautiful selective mouth watering recipes. I don't know what to select, each and every recipe is unique. My daughter's most favourite is chicken. At last I selected the extremely popular Tandoori Chicken recipe from Minnie's kitchen corner.

Visit her blog for the awesome recipes. You know, my daughter always use this word "Awesome".



Easy Chicken Barbecue:
Ingredients:
boneless chicken,skinned and cubed - 500 gm
ginger paste- 1 tsp
garlic paste - 1 tsp
chilli powder - 1 tsp
garam masala - 1/4 tsp
turmeric powder - 1/4 tsp
red food colour - pinch
thick natural yogurt - 2  tbsp
lemon juice - 3 tbsp
oil - 1 tbsp
salt - to taste.

Steps to follow:
In a bowl mix together chicken pieces,ginger,garlic paste,chilli powder,garam masala,turmeric,salt to taste, yogurt,lemon juice,red colour, oil and leave to marinate for at least  2- 3 hours.
Fire the barbecue stove.
Grill the chicken for 20 minutes until cooked turning several times.
Check the chicken pieces are cooked and serve immediately.
Serve on a bed of mixed vegetables, salad leaves,garnish with onion rings and lime wedges.

Mango Choco Checker Board & Marble Cake - HBC -2

 Home bakers challenge was started by Priya Suresh, and last month Pizza baking and this month challenge was  Mango Choco Marble Cake both egg butter version and eggless butterless version was  hosted by Sangee Vijay (Recipe Source). Click here for details.
.I made both versions the combo was really delicious.

Mango Choco Checker Board  Cake - Egg & Butter Version
Ingredients:
all purpose flour - 1 and 1/4 cup
baking powder - 1 tsp
sugar - 3/4 cup
cocoa unsweetened - 1/4 cup
egg - 2 nos
butter melted - 1/2 cup
butter milk - 1 cup
mango puree - 1 cup
vanilla extract - 1 tsp

Steps to follow:

In a large mixing bowl mix together flour,baking powder and sugar.
 Melt butter in a separate bowl.
 Roughly beat the egg and add to the melted butter.
 Then add mango puree and butter milk.

 Mix altogether till everything is combined.

 Now slowly add the flour mixture .Add vanilla extract and mix well.
 Pour half of the mango batter ian a pan add coco powder and mix well and keep aside.Now Mango and chocolate batter are ready.
 Then in a  lined loafed pan add mango and cocoa batter alternatively like a checker board pattern.
 Preheat the oven to 300 degree fahrenheit..Bake for 50 minutes until a tooth pick inserting in the centre of the cake.Cool completely in a rack before serving.

 Slice it and serve. Enjoyed the delicious spongy mango choco cake.


Mango Chocolate Marble Cake : Eggless & Butterless Version:
Ingredients:
All purpose flour - 1 cup
baking powder - 3/4 tsp
baking soda - 1/4 tsp
salt - pich
oil - 2 and 1/2 tbsp
sugar - 1/2 cup
mango puree - 1/2 cup
yogurt- 2 tbsp
coco powder - 2 tbsp mix with 1 tbsp water.
vanilla essence - 1/2 tsp

Steps to follow:


 In a large mixing bowl combine sugar & oil ,to this add mango pulp,yogurt ,vanilla essence and mix well.Now take a small cup add  cocoa powder and water mix well and keep aside.


 In another bowl add flour,baking powder and baking soda and salt.Mix thoroughly.


 Now add the flour mixture to the mango pulp mixture
 And mix until everything is combined very well.

 Now transfer half of the mango batter to another bowl and mix the coco paste and combine well.
 Now both batters are ready.
 Now to a greased pan add mango batter first .
 Then add coco batter in small circles and swirls us you like.This is simple marble pattern.

 Preheat the oven to 300 degree Fahrenhiet  and bake it for 50 minutes or until done. You can also add mini chocolate chips and chopped nuts to it.
 Checked by inserting a knife or tooth pick which should come out clean..
Cool and slice it and serve.
